Almond Bubble Tea

So, about 5 years after the bubble tea craze I still miss it. It took me two tries but I have a good recipe to make your own.

You will need:

a batch of almond milk

a package of dehydrated tapioca bubbles (available in Cyrildene if you live in Joburg)

3 tea bags of darjeeling tea

1 cup of ice

First make a batch of almond milk and put it in the fridge. Then boil some water and make approximately three cups of tea. In a giant jug mix together the almond milk and the tea and let it sit in the fridge for at least 3 hours. After 3 hours some of the almond milk might have separated so mix it with a spoon. Boil the tapioca pearls for 3-5 minutes. The key is to use a big enough pot. Like pasta, if they don’t have enough room to move around they will stick to each and instead of bubbles it will be a rather unappetizing clump of tapioca that looks like over grown caviar. In a blender mix the almond/tea mixture with a cup of ice. Pour this over a couple spoonfuls of tapioca bubbles and add maple syrup if it isn’t sweet  enough for you. If you can, get your hands on some of those giant straws in which you can suck your bubbles through, then do….otherwise use a spoon! Enjoy on a hot Saturday morning, preferably next to your pool.
