I like a quick, healthy Saturday morning breakfast that uses a minimal amount of dishes (and therefore minimal clean up) whenever possible. It also helps that it’s easy when you’ve had one too many glasses of wine the night before. On Saturday in our hungover state we enjoyed green eggs and ham. You’ll need:
Oven proof bowls
2 eggs per bowl
Pea pesto (or any type of green pesto)
Micro greens or rocket (rucola)
Avocados (sorry for those of you who don’t live in SA, the land of GIANT HEAVENLY AVOCADOS)
If you want to get decadent then a few grates of pecorino at the end
2 strips of bacon per person
Mozambican inspired chutney (optional)
It’s easy as this: Pre heat your oven to 200 degrees C or 400 degrees F. Crack eggs into each oven proof bowl. Add pea pesto, garlic, salt and micro greens/rocket. Place in the oven until you’re happy with the runny-ness of your eggs (we like our eggs runny). While eggs are cooking fry your bacon and slice avocados. When the eggs are done, add more micro greens/rucola and add avocado to the top of the dish. You also have the option of cooking your bacon in the egg cup. A yummy little breakfast with barely any dishes you have to do later!
